I've kinda been on a pizza kick lately. I must admit it's been a challenge dodging all of the signs for cheap pizza in this city! But, FreshDirect sells really yummy frozen whole wheat pizza dough that comes out to 12 PPV for the whole crust! They come 4 in a box and are really handy to have in your freezer on those nights you are craving a good slice of pizza.
Here's my new favorite go-to slice:
SHRIMP& SPINACH WHOLE WHEAT PIZZA

Ingredients:
1 FreshDirect Whole Wheat Pizza Dough (thawed)
4 Wedges Laughing Cow Light Garlic & Herb Cheese
2 Oz. Part-Skim Shredded Mozzarella Cheese
6 Oz. Frozen Shrimp (cleaned and thawed) (weight is before cooking)
4 Cups Raw Spinach (washed)
2 Cloves Fresh Garlic (minced)
2 Tsp Olive Oil
Salt & Pepper
Preheat oven to 385 degrees.
Heat 1 tsp of Olive Oil and garlic over medium heat in a sautee pan. When garlic is slightly browned, add your shrimp. Cook until they just turn pink then transfer to a plate. In the same pan, add your spinach with some salt and pepper and cook until it wilts.
Dust with flour and roll out your pizza dough to the desired size (we usually make about a 12" pie). Spray entire crust with 1 spray (1 tsp) of Olive Oil. Spread the laughing cow cheese wedges evenly over the crust as your "sauce". Add spinach, shrimp, and mozzarella on top.
Bake on a pizza pan at 385 for 10 minutes or until cheese is melted and crust is browned. We got our pizza pan at Kohl's for about $12 and it really makes a difference. It helps keep the crust crispy instead of soggy because air can circulate around the entire pie in the oven.
I will usually pair this with a nice low-point salad, or a cup of Progresso Light Soup for dinner. Enjoy!
